Ingredients:
8-12 oz Small Oysters
1 Cup Cracker Meal (or preferred breading)
2 Tbl Tar River Central North Carolina Seasoning, Rub & Sauce Mix
2 Eggs
Vegetable or peanut oil for deep-frying
Instructions:
1. Rinse and drain oysters
2. In a shallow bowl, combine cracker meal and seasoning
3. Crack the eggs into a second bowl and whisk well
4. One at a time, dredge an oyster in the cracker meal mix, dip it in an egg, dredge it in the cracker meal a second time, and place on a dish (hint: try to use one hand for picking up the oysters when they’re wet and the other for dredging them in the cracker meal)
5. Repeat Step 4 until all oysters are prepared for frying
6. Fry the oysters in small batches and drain until all have been cooked
